I’ve been craving a good green juice lately. If you’ve juiced, you know how it is. You also know how much of a hassle it can be to make! When I picked up my CSA box this weekend it included a bunch of dandelion leaves. Now, I’ve tried lots of ways of eating these raw and cooked and really the only way I like my dandelions is in a juice. Or in a flowering field.
So that determined what I was doing this week. To get my greens in, I bought enough supplies to compliment the chard, romaine, and dandelion from my box to make a quart of green juice that will last me for the week.
What you see laid out includes green chard, dandelion leaves, romaine lettuce, parsley, cucumbers, celery, limes, and green apples. Juice it all together and serve with a plate of pasture-raised fried eggs (the only truly humane kind) on toast with a side of warmed tomatoes. The perfect get-up-and-go breakfast. Who needs coffee when you have this kind of power fuel! Refrigerate the extra juice for up to 5 days.
